The history of food trucks in the United States spans over 150 years (Early 1600’s-1800’s), evolving from horse-drawn wagons serving cowboys to gourmet mobile kitchens fueled by social media. The concept of mobile food predates motorized vehicles, starting with vendors and animal-drawn carts. Walter Scott, a vendor in Providence, Rhode Island, modified a covered wagon by cutting windows into it. He parked outside a newspaper office to sell sandwiches, pies, and coffee to late-night workers!
